Some metrics may have been declined during the initial Health access prompt. Go to iPhone Settings → Privacy & Security → Health → Health Glance and allow reading for the metrics you want to see.

Open Health Glance on your iPhone once — the latest values are then sent to the watch. To add a complication, press and hold the watch face → Edit → choose “Health Glance” in a complication slot.

Values are shown as of the time they were recorded in Apple Health. Depending on when your devices write data, there may be a delay from your actual condition. The measurement time is shown under each value.
